ハギス賛歌 -- バーンズ

「今日の詩」の選者は「ああ僕の恋人は六月に咲く」に引き続き、スコットランドの詩人ロバート・バーンズの「ハギス賛歌」を送ってきた。リーダーの英和辞典でかなり訳せるが、ＯＥＤも参照した。

「食うために生きる」フランス人と狭い海峡を隔てて「生きるために食う」イギリス人が住んでいる。そのイギリスでも、スコットランドとなればまさに「生きるための」食い物ハギスという薄気味悪い食い物がある。

ハギスは羊の胃袋に詰め物をして茹でた料理である。中身は茹でた羊の内臓、オートミル、刻んだタマネギである。このハギスを民族の誇る料理であるとする協会ができたという話はどこかで読んだ。

実はそれ以前にバーンズがハギスを賛美する詩を書いていたのである。以下は前半はバーンズの原詩、和訳は少しばかり自信のない私の訳である。

途中で悪魔が登場するので気をつけて頂きたい。伝説によれば、狡猾な悪魔と一緒に食事をするときは長いスプーンを使うべきとされる。悪魔に食べられて自分の分はなくなるからである。フランス調理と違って美味なハギスにかぎりその心配はない。スコットランド人の旺盛な食欲は悪魔にハギスを食べる暇を与えないという話になっている。


Address To A Haggis

Fair fa' your honest, sonsie face,
Great chieftain o' the puddin-race!
Aboon them a' ye tak your place,
Painch, tripe, or thairm:
Weel are ye wordy o' a grace
As lang's my arm.

つむのような脛は鞭にはいいだろう
握り拳はナッツのよう
流血や戦場を駆け抜けるには

ハギスが田舎者をを育てた
足音で大地を揺るがし
広き拳に剣を握り
刃をうならし
彼はアザミの先のように
手も足も頭も切り落とす

お前は人々を育む力だ
食事には力を皿に盛りつけろ
スコットランドには皿ではねる
水っぽい食い物は要らない
お前がスコットランドから感謝の祈りが
欲しければハギスを与えよ。

この見た目に悪いことこの上ない料理には逸話がある。

シェイクスピアの悲劇「マクベス」で、スコットランドの王位簒奪者のマクベスが宴会を催す。彼が殺したはずの王の亡霊が宴会に出てきた。彼は錯乱状態になる。ハギスが料理に出てきたのが、マクベスの狂気のきっかけだっとというまことしやかな話がある。この話ブリトン人が創作した話ではない。ハギスを広めようというスコットランド人自身も認めているお話である。

先日エディンバラを案内する番組があったが、モルト・ウィスキーは出てきたが、ハギスは登場しなかった。スコットランドに行かれたらハギスを食べてみられるべきである。

写真がハギスなのでしょうね。食べなれれば病み付きになるような味なのでしょうか。検索してみると相当しつこい味のようですがマッシュポテトとあわせるのだそうで、缶詰もあるようですし試食してみたいです。私は好き嫌いは少ない方、ウイスキーは時々飲みますので。

胃袋に入っているので丸っこいはずですが、あえてこの写真をウィキペディアで選んだのはタータンのテーブル・クロスがあったからです。私の勇気ある知人がハギスをスコットランドで食べ、発狂せずに無事帰ってきました。短期滞在でしたので病みつきにはならなかったとか。肝試しにはいいかと思います。

I cannot eat stomach of sheep. Have you eaten it?
For meat, I can only eat beaf, pork and chicken. And I don't eat much meat. I prefer vegetables and fishes. May I ask you if you can eat every day western or european food when you are inwestern or european countries?

I asked the same questions to my South Korean friends. 90% of them answered that they cannot eat every day western or european food, even if european food is delicious. They told me also that they have to eat Korean food or Asian food(Japanese or Chinese food).

But my sister answered that she can every day eat western or european food without Korean food. In fact, my sister does not like Asian food including Korean food, because she does not like eating rice. She wants to eat every day spaghetti or Pasta. For me, I prefer French or Italian food(Salade, pasta, grilled saumon. etc), but I eat also asian food.

In attitude for food, French people and British people are different. French people make fun of British food, saying that British food is terrible. I like very much French food, but I cannot eat French food of frog or hare. I am afraid of these food.^^

Haggis is world famous dish for its grotesque shape. In the United Kingdom, people eat to live. In France, separated by just a narrow channel from her, people live to eat. A surprisingly big differnce in both is in their enthusiasm for
food. You will be served with bacon and egg in the morning at Bed and Breakfast.

Next you stroll at an English garden nearby. You are hungry enough. You can find an open-air stall, where you are served with fish and chips. At night you are served with tea and biscuit. If you want to lose your weight, you should stay with a family in England.

Scotland has a good reputation with her frugal life style in the U.K. Frugality is a virtue. Her frugality is symbolized by Haggis, Scottish delicacy.

I have eaten Fish and Chips in Vancouver. But I have never challenge Haggis. That may be the reason why I have no stamina as well as braveness. But Haggis is canned and exported from Scottland. You can find or order it in a foodstore specializing in foreign food.

I am noodle-eater. When I stayed in Aachen, Germany, I got sick. The cheapest restaurant was run by Turkish brothers. But I was fed up with kebab. I crossed the border to go to the Belgian Capital of Brussels to find a Japanese restaurant and see the Urinating Boy. That was a relief.

In general, Japanese restaurant is very expensive. Chinese restaurants are reasonable but not to my taste. In Aachen, I found an Italian restaurant, which was very good and expensive.

It is tough for me to stay long in Western country. But I do not like a menu of Kentucky Fried Chicken with Coca-Cola, but in Germany beer is licenced in KFC. Some comfort. In Vancouver, Asian people run ethnic dish. I have Japanese friends. I can stay long.

The English call the French people <Frog>. I was told that Frog tastes like Chiken. I can challenge、but dare not eat it. I have not eaten snakes, allegedly delicious and afrodisiac. I am too old to challenge strange food. Ordinary Japanese dishes are best. I prefer 刺身 to oily 天ぷら or カツ丼.

I think French dishes are much more delicious than English ones. In North America, Quebec and New Orleans are quite another world. Jean-Pierre Rampal, the world famous flutist in France wrote a preface on the book titled <Sushi>. He had two inviting foods. One is Sushi. Another is Chicken in New Orleans.

After the Revolution, many French chef lost their job. Some went to New Orleans. They are hired by wealthy plantation owners, Creole. You remember Miss Scarlet's life in "Gone with the Wind". New Orleans attracts the French gourmet. He was willing to accept inviation from Japan and (South)America.

For asian dishes, I eat often Japanese dishes or Chinese(especially Hong Kong style's dishes) in Seoul. In Seoul, there are many Japanese restaurants and Chinese restaurants. In Seoul, among Korean youth, Ramen, Udong, Sushi, Dashimi, Takoyaki, Donburi, Donkatsu are very popular.

Last week, near my home, I found a Japanese restaurnat where I can eat Ochazuke(お茶漬け) that I like very much. So I am happy. I like also Chinese dishes like fried rice with saumon, noodles. I ate Chinese noodles in "Le Marais Paris, It was delicious.
