Peach -Blueberry cobbler

3/4c plus 2TS sugar
1/4 c      brown sugar
1TS        cornstarch 
1/2 c      water
1TS.        lemon juice
1c.          Blueberries 
2c.          Sliced peaches,  I use 6 or 7 peaches which makes more than 2cups.
1c.          all purpose flour
11/2 ts    baking powder
1.             Egg
1/2 ts.      Salt
1/2c.        milk
1/4 c.       melted butter
1/4 ts.      Nutmeg


Preheat oven to 375F.

Combine 1/4cup sugar, brown sugar and cornstarch in a sauce pan, add water.
Cook over medium heat until thickened, stirring constantly.
Remove from heat and stir in lemon juice and fruits.

Pour into a lightly greased 8 or 9 inch square baking dish.

Combine flour, 1/2 cup sugar, baking powder, and salt.
Add milk and butter, beat until smooth, and spoon over fruits.

Combine 2TS sugar and nutmeg, sprinkle over batter.

Bake at 375F for 40 minutes or until golden.

6-8 servings.

Thai BBQ Chicken

This is the recipe we liked a lot last night.
I'd better keep the recipe here so that I won't loose it.


Ingredients

  • 10 cloves garlic, minced
  • 1 tablespoon black peppercorns
  • 1 tablespoon coriander
  • 1 stalk lemongrass, trimmed and cut into small segments
  • 2 red or green Thai chiles
  • 1/2 fresh chicken, quartered
  • 2 tablespoons fish sauce
  • 2 tablespoons yellow curry powder
  • 1/2 can coconut milk
  • 2 tablespoons brown sugar
  • Dipping Sauce, recipe follows


Directions

Heat a grill to medium.

Using a mortar and pestle, crush garlic cloves, peppercorns, coriander, lemongrass, and Thai chiles into a chucky paste. Using a large spoon, transfer the paste to a large mixing bowl. Add the chicken and the remaining ingredients and mix well. Cover and refrigerate for at least 2 hours or up to overnight.

Put the chicken on the grill, skin side down, and brush with the marinade. Grill for about 15 minutes then flip the chicken over and brush with the marinade. Grill the second side for about 15 minutes. Discard the marinade. When the chicken is cooked and tender transfer it to a serving platter and serve with warm dipping sauce.

Dipping Sauce:

  • 1/2 cup rice vinegar
  • 1/3 cup brown sugar
  • 2 large garlic cloves or 4 small, minced
  • 2 teaspoons Thai red chili sauce or Sriracha
  • 1 tablespoon fish sauce

Put all ingredients in a saucepan and put on the grill. Stir and bring to a boil. Move the pan to a cooler part of the grill and let the sauce simmer for 10 to 15 minutes, stirring occasionally. The sauce will reduce and become thick. Serve warm with chicken.

How about some vegetable dish??

I'm sure you are not eating much veggies...
You can eat this as a side dish for the grilled meat or fish..(or you can put the meat in the casserole and bake with vegetables.)

Healthy meal for you!

carrot peeled and sliced diagonally (about 1/8inch thick)
potato sliced same thickness with carrot
onion peel brown part of skin and sliced (1/4inch thick)
zucchini cut in half in length wise then sliced
green onion cut off the roots and cut 4 inch long in length
tomatoes sliced

Those are just examples, you can use any vegetables you want.

olive oil
balsamic vinegar
salt and pepper

Drizzle oil and vinegar. salt and pepper to taste.
Mix the vegetables with your hands (or use the utensils.)
Bake in the preheated (375F) oven for ??? maybe 30 minutes..??

Zucchini Bread

This is a simple and healthy(maybe) cake recipe.
One way to eat the vegetables!

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
3/4 cup vegetable oil
1 1/2 cups white sugar
3 teaspoons vanilla extract
2 cups shredded zucchini(up to 3 cups)


DIRECTIONS
Butter and flour two 8 x 4 inch pans or use muffin pan.
Preheat oven to 350 degrees F.
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini until well combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

*Shorter time if you use muffin pan.(20 to 30min.)

Apple crumb pie

I think you can make this too.

for 1 pie

Filling:
4 or 5 apples (Fuji, Gala, or Granny smith) peeled and cut in bite size.
2 table spoon butter
2 or 3 table spoon brown sugar, adjust the sugar depend on the sweetness of the apples
juice from 1/2lemon
1 tea spoon corn starch

crumbs:
1 or 1 1/2 cup musli type cereal( dried fruits, nuts, oats, etc.)
2/3 cup all purpose flour
1 teaspoon sugar
3 table spoon butter, cut in small pieces

Preheat oven to 350F.

To make filling, in the frying pan, melt the butter add apples and sprinkle brown sugar and
lemon juice and cook for 5minutes or so.
Apples don't have to be cooked all the way.
Set aside to cool.
When it cools down, sprinkle corn starch and mix.

Put the mixture in the pie dish.


To make crumbs.
Mix all the ingredients with hands.

Sprinkle over the filling and bake for 30minutes or until crumb is golden brown.
