"Over" means "past."

And "due" means "the time you need to finish something by."

If I finish it on Saturday, it's overdue.

Like paperwork.

So, you go out and you buy it and then you eat it.

Well, “customers” is very common

when we’re talking about someone who visits a store.

So that would be a customer coming into the store.

Let's take a look at conversation at work.

Helping Start a New Restaurant (6)

Sugita: In the current vignette, Nancy Alvarez talks about helping some

friends open a buffet restaurant featuring Mexican Latin home cooking.

It sounds like she's helping them do elaborate planning

in a very competitive sector.

Many restaurants fail during their first year.

Heather: That's got to be one of the riskiest businesses in the world.

My only experience working in the retail food business was all the way

back in high school when I worked at that ice cream hot dog parlor.

There were so many different elements you had to be on top of

just as an employee, you know, let alone a manager.

Following all the regulations.

I had to study for a food handlers' license.

I remember taking the qualification test.

Making sure that the store was clean and the food was presented

in a sanitary and visionary appealing way.

And dealing with crazy customers and lazy staff.

It felt like there was never a down moment.

I like the sound of the restaurant Alvarez is working on.

I love Mexican food and I love buffets.

S: I was intrigued by the concept of all-you-can-eat restaurants,

which are popular in the States.

There's plenty of food available at one fixed price.

I wondered how these restaurants can make money,

even with high agricultural productivity.

In doing research for the vignette, I came across some hints.

In buffet restaurants, you can vastly reduce your waitstaff

and cut down on overhead because customers serve themselves.

Many buffets also prepare their food in bulk, so they can operate

with a smaller back-of-house team.

H: Ah, that makes sense.

Are there any other ways they maximize profits?

S: Yes, restaurateurs are encouraged to use larger serving spoons

for cost-efficient and filling dishes like rice and vegetables.

And they use smaller pans in the steam table.

That way, they're putting less food out at one time and they can also

minimize waste, which helps reduce food costs.

Plus, customers are provided with relatively smaller plates,

bowls and silverware.

Smaller dinnerware means they'll eat more slowly,

so they'll get full faster.

Oh, and if you ever wondered why there's a carving station

and a chef for roast beef, ham or turkey, that way restaurant operators

can control the potions and ensure that customers don't take too much

of the more expensive items.

Very clever!

H: Indeed, very crafty.

They're limiting how much people eat of those foods,

but not making them feel deprived.

Quite the opposite, in fact - I'd say having the chef there makes

the customers feel like they're being pampered.

Which always goes over well, in any kind of business.

S: The vignette says more money is being spent at restaurants

and bars lately.

Do you eat out much these days, Heather?

H: For dinner, much more than I did just a few years ago.

It was a happy happy day when my daughter finally became able to

eat at a few restaurants.

Although the number and variety is still highly limited.

Ah, she's pretty picky in what she'll eat.

So, we tend to rotate with her among three main restaurants.

Fancy restaurants are still a rare treat.

And we never take her there.

If I go to one of those, it's because I'm dining out with friends

or work associates.

And my husband's home with our daughter.

Or, I'm home with here and he's out.

She also lists various factors that have to be considered in order to

make that kind of restaurant success and invites her A & A colleagues

to visit the restaurant when it opens.

Gen Xer(=Generation Xer):

Family values: Values, ah, usually traditional ones that emphasize

the family and protect it.

Many political parties claim to be the party of family values.

Place a premium on: Here, "premium" means "value."

So, placing a premium on something or putting a premium on it means

we value it, we attach importance to that thing.

This company puts a premium on work-life balance.

Or, we place a premium on creativity.

Quick-service: 迅速な素早いサービス

Same day service 即日仕上げ

Same day delivery 当日配送

You'll also hear about things like one day service, overnight service.

Midscale: Middle of the road in terms of quality and cost.

We're staying in a midscale hotel near the beach, for example.

Or, this shopping area contains both midscale and high-end boutiques.

Mid-sized 中規模の中ぐらいの大きさの

All-you-can-eat salad bar and buffet: "All-you-can-eat" means

customers can take as much as they want for the same price.

I love all-you-can-eat breakfast buffets.

I always eat too much at those.

And we also say, "all-you-can-drink."

The restaurant offers all-you-can-drink Champaign for an extra fee.

At a fixed price: prixfixe = fixed price

Profitable: Around the middle, Lyons says,

"I like buffets. But are they profitable?"

Keep a close eye on: Watch something carefully, monitor it carefully.

Alvarez could also say, "keep a sharp eye on" or

"keep a close watch on."

I keep a close eye on my spending, for example.

Or, we need to keep a sharp eye on David.

I think he may be embezzling funds.

Ingredient:

Alvarez is talking about the components used in making food.

But we also use "ingredients" about other elements of a whole.

Things that combine for a final product.

You could say, "This product has all the ingredients for a big hit.

It's easy to use. The design is good. The price is affordable."

Glorified: When something is glorified, it's presented

as more impressive or lofty than it really is.

Things like, his job title is second assistant manager.

But he's really a glorified errand boy.

Or, imagine a football game where both teams are slow.

They have no energy.

A sports journalist might say,

"This isn't a game. It's a glorified practice."

With an emphasis on: With particular attention given to this.

With particular care, focus.

We're reworking this product with an emphasis on design.

Or, we're redecorating our office with an emphasis on

shared working spaces.

Checkout: Examine, evaluate something to see how it is.

You could say, I'll check out the hotel's banquet facilities tomorrow.

See if they're large enough for the company party.

Or, I'm going to check out that new stationery store.

is doing well.

And McMillan describes how many busy office workers eat alone

at their desk, instead of going out for lunch.

Ueda mentions the threat to the traditional restaurants from online

delivery and takeaway services, an area that is expected to

grow very quickly.

I get that. At the top, Alvarez says,

"The breakfast business is doing quite well."

And Lyons replies, "Hmm. I get that."

I understand that. I see why that would be.

You could also say things like, ah, I get why Tom's mad.

He was promised a raise and he didn't get one.

Or, I don't get why Karen's leaving.

I thought she liked working here.

I got you. わかりました

Stressed-out: Under a lot of stress, a lot of tension.

Here, ah, "stressed-out" is an adjective.

So, there's a hyphen between the two words.

We also say, "be stressed out."

And in that case, there's no hyphen.

Like, I'm really stressed out about giving this speech.

Harried:

Desk lunch:

Brown-bag it: This comes from the image of carrying our lunch

in a brown bag from a store.

I usually brown-bag it when I go to a certain theme park.

Ah, waiting in line for one of the restaurants takes too much time.

Brown-bagger

Wolf down: Eat something quickly and ravenously

like a wolf gobbling down its food.

Things like, I only had 15 minutes for lunch.

So, I wolfed down a sandwich.

Or, we often tell kids,

"Don't wolf down your dinners. Chew your food."

That is:

Threat: Ueda says, "The traditional restaurant faces yet another threat:

online delivery and takeaway services."

Online delivery service:

Takeaway service: Ueda says, takeaway,

which is a mainly British expression.

Ah, perhaps he got this from McMillan.

Ah, in America, we probably say "take out."

Likewise, staff in a restaurant may ask you, "Is this for here or to go?"

Or, would you like this for here or to go?

Is this for here or to go? 店内でお召し上がりですか？それとも持ち帰りですか？

Via the internet: By means of or by way of the internet.

And both [vaia] and [via] are correct.

You can say it either way.

Likewise, my father often flies from Alaska to Tokyo via Seattle.

Or, I might go to the airport via the shuttle bus.

Comprise:

Industry expert: People who are experts in a certain industry.

Ah, likewise, there are legal experts, financial experts

or handwriting experts, who often testify in court cases.

Generation X:

Exception: Up at the top, Alvarez says,

"There's an interesting exception to this trend."

If something is an exception, then, this rule, this situation,

ah, this description doesn't apply to it.

Like, sales were down this year with the exception of our laptop division.

So, the situation of sales being down did not apply to the laptop division.

Ah, we also say, the no exception,

which means something does conform to a rule or a situation.

Like, lots of people overeat when they're stressed out.

And I'm no exception.

Exception rather than the rule 通例と言うよりもむしろ例外

Through the end of: Down at the bottom, Ueda says,

"through the end of this decade."

So, lasting until the end of this decade, until that decade ends.

You could also say,

"He's stationed in Paris through the end of next year."

Or, the exhibition runs through Friday.

You could say, "I just wanna check." Or, "Are you saying…?"
