Recipe for Zucchini Boats ズッキーニボート レシピ

Here is the recipe for one of my favorite dishes, Zucchini Boats.

This recipe is from my mother-in-law.  My husband's late wife also cooked it.

I never met them because they passed away before I married.

I often cook it on special occasion such as their birthdays.

It is very tasty even though it has very simple ingredients and a short cooking time.

Zucchini Boats is a typical summer dish. And it is also good for Christmas potluck party

because of the color...GREEN and RED !!

4 zucchini squash (approx 6 inches long)

1/2 lb ground beef

4 slices of cheese ( for example, Swiss cheese )

3-4 small tomatoes

  1 Cut zucchini in half lengthwise.

 2 With small spoon, scoop out meddle of zucchini.

 3 Fill up boats with ground beef.

  

 4 Bake at 325 F for 10 minutes.

 5 Take them out and top with cheese and sliced tomato.

                                                        Then bake again at 325 F for 10more minutes.

I like my zucchini boats well done (right), even though they don't look as good.  :-)
